Add meats, breadcrumbs, herbs and spices. Process until just combined and meat is broken down. Texture should be sticky. Measure meat mixture into 6 balls (about 175g each). Shape each ball into an oblong/oval shaped patty. Stick 2 skewers (well soaked in water if wood) through the meat and squeeze to help hold it together. You can omit skewers if you don’t have them. Preheat grill on high. Inside temp should reach 450-500F/230-260C. (alternately you can cook these under a medium broiler if you don’t have access to a grill but keep a close eye on them to be sure they don’t burn) Clean and oil grill grates. Spray or brush oil on meat patties then place them on the grill to cook for 4-5min, lid closed. Flip to side 2, lower lid and grill for 3-4 more minutes. When done, internal temp should be at 150F/63-65C. Allow meat to rest for 5 min. Remove skewers. Slice meat into pieces similar to the size of euro meat. CUCUMBER TOMATO SALAD ▪150g (1 med) cucumber, partially skinned, seeds removed, medium diced ▪150g (1med) tomato, medium diced ▪½ red onion, medium diced ▪15g or 1/3c parsley, chopped ▪15g (or juice of ½ ) lemon juice ▪15-20g or 1-1.5Tbsp olive oil ▪Salt, large pinch Combine all ingredients in a bowl and allow to marinate. LEMON HERB YOGURT SAUCE ▪200g or 1c plain yogurt ▪75g 1/3c mayo ▪15-20g (or juice of ½) lemon juice ▪1 clove garlic, minced ▪2g or 1/4tsp salt ▪2-3g or 2Tbsp fresh dill, chopped Combine all ingredients except dill into a high sided container and blend with immersion blender until smooth. Stir in dill. PUTTING IT TOGETHER (additional ingredients needed) Fluffy flour tortillas (or good pitas if you can find them) Greek style feta cheese, crumbled Pepperoncinis Shredded lettuce Toast tortilla or pita on both slides and hold in a tortilla warmer or small container with a lid until you’re ready to build the “gyros”. Add meat to tortilla/pita, top with a generous drizzle of the lemony yogurt sauce, crumbled feta, pepperoncinis, and a large spoonful of the cucumber tomato salad. 🎧MUSIC: EPIDEMIC SOUND. This is a limited time offer for my viewers. *RECIPE, MAKES 8-10 SANDWICHES* 10 oz (300g) plain Greek yogurt 1 cucumber 1 lemon 1-3 garlic cloves fresh or dried dill 1 red onion 2 lb (900g) ground lamb 2-3 tbsp Herbs de Provence (or any combination of dried thyme, oregano, marjoram, rosemary) 1-2 tsp ground cumin White wine (or water) for deglazing 8 oz (200g) fresh tomatoes 8-10 pita loaves or hamburger buns ketchup flour salt pepper To make the tzatziki, grate the cucumber and squeeze as much water out of it as you can. Combine it with the yogurt in a mixing bowl along with some lemon juice, grated or finely minced garlic, olive oil, dill and salt. Add the flavorings in conservative amounts, mix, taste, and add more of whatever you want. Peel the onion and slice one quarter of it into thin slices for garnish. Chop up the rest. Put a wide pan on medium-high heat, put in some olive oil and fry the chopped onions until just starting to brown. Put in the lamb and stir aggressively with a wooden spoon to break it up and to continuously deglaze the bottom of the pan with the water that will come out of the meat. After about 10 minutes, enough water should have evaporated that the meat will start to brown. Brown it as thoroughly as you can without letting the bottom of the pan burn. Put in a big spoonful of flour, stir, and let it brown in the fat for a moment. When burning is imminent, deglaze with white wine or water. (If using water, you might also put in a splash of vinegar — white balsamic is the closest substitute for white wine.) Mix in the herbs, cumin, salt, pepper and a little ketchup (maybe 2 tbsp) to taste. You might need to add more liquid to get a saucy consistency. Slice up the tomatoes. Warm the bread. Put on the meat, top with tzatziki, sliced onions and tomatoes.

Gyros are Greek sandwiches (if you can even call them that) typically made from lamb, beef, or even chicken. Biting into a gyro is an experience like no other. The variety of textures, temperatures, and flavors is unmatched. But why hasn't anybody ever made a gyro using wagyu beef? My good friend 🤍The Golden Balance and I carefully considered this question and wholeheartedly agreed: we had to give it a try. Now, you know me pretty well at this point. And this means you probably have a good understanding of my love for rotisserie chickens. The great part about gyros is that the meat is cooked on a vertical rotisserie, so this provided the perfect opportunity for me to get one of those machines. And that's exactly what we did. Gyro: Wagyu beef strips Paprika Oregano Chili powder Thyme Cumin Celery salt Minced onion Olive oil Salt Pepper Bread: 2 2/3 cups bread flour 1 tsp salt 10 oz lukewarm water 1.5 packets active dry yeast 2 tbsp olive oil Tzatziki: 1 medium cucumber (peeled) 2 cups Greek yogurt 1/8 tsp cayenne pepper 1 clove minced garlic 2 tbsp lemon juice 2 tbsp fresh dill Salt and pepper Lemon zest Toppings: Fries White onion Tomato (salted) Dill Check out these other popular videos! Follow my easy recipe to create the most delicious “Restaurant Quality” gyro pitas at home. This gyro meat can and should be doubled and even tripled because it freezes well. As a matter of fact, your family will beg you for this Greek-American classic once they try it. Print this recipe here: 🤍 Serves 6: 1 medium onion, quartered 1-pound ground lamb 1-pound ground beef 5 garlic cloves 2 teaspoons salt 1 heaping teaspoon dried oregano 1 teaspoon finely chopped rosemary 1 heaping teaspoon cumin powder ½ teaspoon ground black pepper Pinch of crushed red pepper flakes Equipment: 9 x 5-inch loaf pan For the Sandwiches: Pita bread Onion slices Tomato slices Tzatziki Sauce Lettuce Crumbled feta cheese INSTRUCTIONS Preheat oven to 325 °F, 160 °C. Place the garlic cloves in a food processor and pulse until very finely chopped. Add onion and puree until smooth. Add ground beef with all of the spices. Pulse until the mixture becomes like a paste. Scrape down the sides of the bowl in between pulses. Place the mixture in a loaf pan. Compact it as much as possible. Bake for 45 minutes to 1 hour or until the internal temperature registers 165 °F. Allow the pan to cool at room temperature completely. Refrigerate at least 2 hours before removing from the pan. Remove from pan onto a cutting board. Using a sharp serrated knife, slice it thinly. Pour all of the pan juices over the slices along with any of the fat that has gelatinized. It adds so much flavor when heating it up for the sandwiches. At this point, the gyro slices can be placed in a freezer-safe bag and frozen for future use. To make the Gyro sandwiches, place a cast iron pan over medium heat and cook the gyro slices until they are browned on both sides. Warm the pita bread slightly. Place some chopped lettuce, onion and tomato slices over the pita, the warm gyro slices and tzatziki sauce with crumbled feta. Serve immediately. Enjoy! NOTES Freezer Instructions: Place the cooked gyro slices in a freezer bag or an airtight (freezer-safe) container and store in the freezer for up to 3 months. The Halal Guys first came to the streets of New York City in 1990, when the three founders opened up a hot-dog cart in Midtown. They realized there was a demand from Muslim cab drivers looking for a halal meal, so they began serving American halal food from the cart. Γύρος Get the tzatziki sauce recipe here: 🤍 Buy the loaf pan here: 🤍 Get this recipe on my website: 🤍 Makes 6-8 servings: 1 medium onion, quartered 1 pound ground lamb 1 pound ground beef 4-5 garlic cloves 2 teaspoons salt 1 teaspoon dried oregano 1 teaspoon cumin powder ½ teaspoon ground black pepper Equipment: 9 x 5 inch loaf pan For the Sandwiches: Pita bread Onion slices Tomato slices Tzaztiki Sauce Lettuce Crumbled feta cheese Preheat oven to 325 degrees Fahrenheit, 163 degrees Celsius. Place the garlic cloves in a food processor and pulse until very finely chopped. Add onion and puree until smooth. Add ground beef with all of the spices. Pulse until the mixture becomes like a paste. Scrape down the sides of the bowl in between pulses. Place the mixture in a loaf pan. Compact it as much as possible. Bake for 45 minutes till 1 hour. Allow the pan to cool at room temperature completely. Refrigerate at least 2 hours before removing from the pan. Remove from pan onto a cutting board. Using a sharp serrated knife, slice it thinly. Pour all of the pan juices over the slices along with any of the fat that has gelatinized. It adds so much flavor when heating it up for the sandwiches. At this point the gyro slices can be placed in a freezer safe bag and frozen for future use. To make the Gyro sandwiches, place a cast iron pan over medium heat and cook the gyro slices until they are browned on both sides. Warm the pita bread slightly. Place some chopped lettuce, onion and tomato slices over the pita, the warm gyro slices and tzatziki sauce with crumbled feta. Serve immediately. Enjoy! I took a 4 month break from restaurant food eating challenges to lose over 100lbs from August 9th to December 10, 2021, while completing the 1st Fall semester of my 9-month Dietetic Internship. For my first challenge after my break, 🤍Katina Eats Kilos and I traveled up to nearby Fond du Lac, Wisconsin to each attempt the giant "Coliseum" Man vs Food Greek Gyro Challenge at Coliseum Sports Bar and Grill which was extra delicious!!
