The guests were kept limited due to Covid-19 but the KASHMIRI WAZWAN served lavishly. A very fine example of big fat Indian Weddings, focusing more on food. The Wazwan for the Walima comprised of 25-Courses, that comprised of some of the most amazing dishes cooked by this Master Chef of the Wazwan called the Waza. I got to learn the most intricate details and in-depth understanding of this lavish, grand, and exotic Wazwan. The Waza explained the uses of aromatic Kashmiri Chili and Pran or Kashmiri shallots, he also used ghee and saffron to cook the most complex and aromatic meat dishes of the Wazwan. Few dishes I got experience from scratch were, Mutton Rista, Gushtaba, Mirchi Qorma, Roghan Josh, Seekh Kabab, Waza Chicken, Tabakmaaz, Methi Maaz, Haakh, Dhaniwal Qorma, Aab Gosht, Tamatar Paneer, Dahi Mushroom all served as a royal feast in the copper TRAMI for the Royal Kashmiri Feast at this Dawat e Walima or the Kashmiri Wedding Reception. It was one of the best food and the best experiences of my life. . Wazwan is a multi-course meal in Kashmiri cuisine. Almost all the dishes are meat-based using lamb, beef or chicken with few vegetarian dishes. It is popular throughout Kashmir. In the Kashmiri language, waz means 'cook' or 'cooking' and wan means 'shop'. The ultimate formal banquet in Kashmir is the royal wazwan. Of its thirty-six courses, between fifteen and thirty can be preparations of meat, cooked overnight under the supervision of a master chef called a wouste waze. Guests are seated in groups of four and share the meal out of a large copper plate called the traem. A ritual washing of hands in a portable basin called the Tash-t-naer, which is taken around by attendants. Then the traem arrives, heaped with rice, quartered by two seekh kababs and contains four pieces of methi maaz, (mutton intestines flavored with a spice mixture containing dried fenugreek (methi) leaves), two tabakh maaz (twice-cooked lamb ribs, initially braised with ground spices, then browned in ghee), one safed kokur (chicken with white sauce), one zafran kokur (chicken with saffron sauce), and the first few courses. Yogurt and chutney are served separately in small earthen pots. Up to about 20 items are served thereafter by waza (the junior cook). Seven dishes are a must for these occasions — tabakh maaz, rista (meatballs in a red, paprika-saffron-fennel spice gravy colored with dyer's alkanet), rogan josh, daniwal korma (lamb roasted with yoghurt, spices and onion puree, topped with coriander leaves), aab gosh (lamb chunks cooked with a fennel-based spice mixture, cardamom and partially evaporated milk), marchhwangan korma (chicken legs/thighs cooked in a spicy browned-onion sauce) and gushtaba (meatballs cooked in a spicy yoghurt gravy). The main course usually ends with gushtaba. The gushtaba is a large meatball which signals the end of the main course. After that, desserts are served. It was a small function because of which I got to experience the Wedding very closely. Just as I arrived I reached the tent where the Wazwan Preparation was going on in full swing, later during the day I got to pack the gifts for the guests of Mainz Raat, some exotic dry fruits packed in golden boxes. Authentic Kashmiri Harissa Recipe|| Kashmiri Mutton Harissa🤍kashmiri cuisine Ingredients Required: Mutton - 1 kg Rice flour - ½ cup (or you can use 1 cup of cooked rice in its place) Milk – 250 ml Onions – ½ kg sliced (Keep aside 1 cup onion sliced and fried for garnish later) Spices Required: Garlic Cloves – 4 Peppercorns – 8 Cloves – 4 Cinnamon Stick – 2 Black/Brown Cardamom – 4to5 Green Cardamom – 8to10 Fennel Seeds – 1 /2 Cup Dried Ginger Powder – 1 tbsp Salt to taste Vegetable Oil – 1 cup Get Ready to Start: Take a pressure cooker and add meat to it. Take a generous amount of water, more than you usually do, as the stock will be used later as well. Add to it, sliced onions and all the spices. Cook on medium flame and cook for 2 whistles. Turn down the heat and simmer for about 45 minutes to 1 hour. Turn off the heat and keep as such till all the steam is released by the cooker. Open the cooker and with a spadle stir all the ingredients once to mix them well. Remove the bones from the flesh. Keep it aside for now. Filter the remaining stock and remove any of the visible spices like cardamom pods and cinnamon sticks. Take 1 cup of stock and add rice flour to it. Make a smooth paste. Add the rice flour paste (or cooked rice) to this mix. Follow with a glass of milk and one cup of oil. Cook it on the medium heat while stirring continuously for about 1 to 1.5 hours or till you get the required consistency. Add the remaining stock, slowly to this mix, while stirring all the time.This is an important step in the whole process. The smoothness of the harissa is determined here. So make sure you put some extra effort and stir really well for a long time. Normally the stirring is done with a long wooden spadle, locally known as choncha. The smoother the better :) Once the oil starts leaving the sides of the cooker, your harissa is cooked and ready! Garnish it with the crispy onion fries or pran (shallots) and grab some hot naan or roti! After the usual greetings, the Wazwan was served hot and laid out perfectly in a Copper utensil type dish, called a Trami. The Waza first laid the Seekh Kabab, Tabakmaaz, waza chicken, and methi maaz, which was covered by a lid and placed in front of all the guests to relish this amazing feast and the course by course the served the entire 25 Course Kashmir Wazwan from Mirchi Qorma to Rista, Gushtaba to Aab gosht, Tamatar paneer and mushroom and much more.
