So while everything is supposed to be bigger in the Lone Star state, for this young family, struggling to improve their finances, it meant leaving their spacious home in Arizona for a major home downsizing. After finishing school, Jocelyn and Jarvis had $96,000 of debt from student loans, credit cards, and buying a small rural property. This is the story of how they paid it off in just 20 months, and then built themselves a debt-free custom tiny house for their family of 4. After ignoring their finances for a long time, the couple finally faced reality one night when they sat down and added up all of their debts, and compared it to the revenue they had coming in. When they realized how much they owed, they decided to make some drastic changes so they could pay it off and stop worrying about money. To start, they moved to a smaller apartment, changed jobs, shopped second-hand, froze a credit card in a block of ice, switched to using cash only, and made a budget that allowed them to chip away at their debt. They had a white board with a list of all their debts, which they updated every time a payment was made so they'd continue to be motivated. After 20 months, they were completely debt-free. After that, they continued with their minimalist, frugal habits and were able to save up enough money to build themselves a custom tiny house on wheels. They've been living in the tiny house for over two years now, with their two children, and plan to continue living in it for as long as they can. They are currently saving money to buy a small acreage where they will build a larger off grid home and keep the tiny house as an income property. We're very inspired by this young family's dedication to improve their lives by paying off their debt, by their awareness of their energy consumption, by their efforts to buy less and live a low waste lifestyle. They're trying to make positive change in every aspect of their lives, and that's not always an easy thing to do. Thank you, Jocelyn and Jarvis, for sharing your story with us! Well, this week is a week for resting! But family still needs to be fed, here is an amazing low-cost meal that is sure to please! Thank you for praying for me since this video I been at the Doctors twice for more testing and Monitoring everything I am on bed rest this week and focusing on my health and getting stronger. This video I made last week! Love you all !!! Easy Tater Tot Casserole Made in the slow cooker, this delicious supper is so quick and easy to prepare! Ingredients 1 bag of Tater Tots approx. 32 ounces 1-pound lean ground beef 1 small onion diced 2 cups mixed vegetables fresh or frozen- I did not add this! But will next time 10 ½ ounces cream of mushroom soup 1 cup milk ¼ teaspoon garlic powder 1 teaspoon dry mustard salt & pepper to taste 2 cups cheddar cheese shredded Instructions Brown ground beef and onion over medium heat until no pink remains. Drain any fat. In a bowl mix together soup, milk, garlic powder, dry mustard and salt and pepper. Set aside Place half of the Tater Tots into a greased 4qt slow cooker. Layer beef, mixed vegetables, remaining tater tots and finally cheese. We’ve lived below the poverty line for many years and have now got our heads above that line. Our household income remains well below the national average in the UK but we have paid off all of our debt, including our mortgage. It’s all hands on deck to save and invest for our retirement and for our children’s futures. We hope that we can put them in a position where they don’t have to struggle financially, as we have, and that we can break the generational cycle of poverty that we have experienced. We all have different issues with food, including food sensitivities, so I shop to work around those considerations. We used Almonds and Pecans) 1/4 Cup White Chocolate Chips 1/4 Cup Semi-Sweet Chocolate Chips Mix all ingredients together. Take two greased table spoons and drop cookies onto an ungreased cookie sheet. Bake at 350 degrees for 8-10 minutes. Lemon Snowflakes: (Taken From: Taste of Home Cake Mix Creations) 1 Lemon Cake Mix (with pudding if you can get that one) 2 1/4 Cups of Whipped Topping 1 Egg Confectioner's Sugar Mix all ingredients. Cookie dough will be tacky. Drop cookies by the spoonful into confectioner's sugar until coated. Place cookies on ungreased cookie sheet.
