Today I am going to show you a plant-based Chinese mushroom bun recipe. The buns look like real mushroom, but don't worry, they are actually easy to make! 🎬 Timestamps 00:00 Intro 00:05 Bun Fillings 01:27 Cacao Paste 01:43 Bun Dough 02:40 Shaping 03:57 Proofing 04:49 Steaming - 🍄 Ingredients Fillings Dried shiitake mushroom 15g Canned Sweet corn 25g Sesame oil 1 tbsp Soy sauce 1 tbsp Cacao paste Cacao powder 10g Water 30g Bun Dough (8 small buns） Water 100g Vegetable oil 15g Dried yeast 2g Sugar 1 tbsp All-purpose flour 200g Cacao powder (for dusting) 🍳 Methods 1. Rehydrating mushrooms: soak dried shiitake mushroom in warm water to rehydrate, until the mushrooms are soft (1-2 hours). Then squeeze out any excess water in the soaked mushrooms, remove the stem part and cut the mushrooms into small pieces. 2. Make fillings: stir fry diced mushrooms and sweet corn with sesame oil, and season with soy sauce. 3. Cacao paste: mix 10g cacao powder with 30g water, stir until you have a loose and smooth paste, which looks a bit like melted chocolate. 4. Make the bun dough: Mix water with vegetable oil, dried yeast and sugar, stir until dried yeast completely dissolved in water. Add the mixture to the flour, and mix with a stand mixer (or just use your hands). If you are using a stand mixer, start with low speed for 3-5 mins, and then turn to high speed for 8-10 mins, mix until the dough is relatively smooth. 5. Kneading: Knead the dough with hands until the surface is completely smooth. Divide the dough into 8 small doughs (each around 35-40g, bear in mind you need to reserve some to make the mushroom stems ), shape the small doughs into small balls. 6. Shaping the bun: flatten the small balls with a rolling pin (the centre can be a bit thicker than the edges), add the fillings on top, using one hand to press down the fillings, and use another hand to pull up the dough until you can close it. 7. Mushroom shape: apply a thin layer of cacao paste on the smooth side of the bun (make sure it is not too thick), dip in cacao powder so the powder is sticking on the cacao paste. Remove excess cacao powder with a dry brush. 8. Making mushroom stems: use the remaining dough to make a long and thin dough (should not be thicker than a chopstick), then cut the dough into small pieces. 9. Proofing: Cut off the bottom pointed part, so the buns can sit nicely on a tray. Proof the buns for 1-1.5 hour (depending on your room temperature) without any coverings, once you can see clear patterns on the bun, they are ready for steaming. 10. Steaming and assembling: steam the stems part for 1 min, and the buns for 10 mins. Mushroom Buns #mushroom #mushroombuns #buns #mushroombunsrecipe #easybunrecipe #breadbuns #breadrecipe #milkbread Ingredients 1 cup Maida ( flour ) ¾ cup Button Mushroom ( finely chopped ) ½ cup grated cheese 1 onion ( finely chopped) 7-8 garlic cloves ( finely chopped) 1tspn dry yeast 1 tbspn tomato ketchup ½ tbspn red chilly sauce ½ tspn pepper powder 1 tbspn milk powder 2 tspn sugar 2 tbspn milk 1½ tbspn butter 1 green chilly ( chopped ) Salt to taste Coriander leaves ( for garnish )( optional) Kalonji ( optional ) Method Step 1 Activate the Yeast: In a bowl take 1tspn dry yeast. 1 tspn sugar and ¼th cup luke warm water. Mix well. Keep it aside for 7 minutes. Step 2 Now in a bowl take 1 cup flour. In this add ¼th tspn salt. Create a gap inbetween the flour and pour the activated yeast. Now mix well and start kneeding the dough by adding water little by little. Step 2 A yeast dough is extremely sticky and hence needs to be kneeded nicely. Tranfer it to your work station. Stretch and keep beating the dough till the dough develops elasticity. Now keep this dough aside and let it rest for 20min. Step 3 Now heat a pan Add 1 tbspn oil and 1 tbspn butter. Now add finely chopped garlic and mix well Add 1 chopped green chilly and 1 onion finely chopped. Saute for 1minute, or till the onions turn golden brown. Step 4 Now add ¾ cup finely chopped mushroom. Saute for another minute. Add salt to taste and ¼tspn pepper powder, 1 tbspn tomato ketchup , ½tbspn red chilly sauce, mix well. Now mix it well.Turn off the flame and let the filling cool. Step 7 Now place the dough on a rolling board and flatten it slightly using ur palm and cut into 6 portions. Step 8 Take 1 portion and tuck it from the edges and shape it into a ball. Now press slightly towards the edges and shape it into a "katori" or a "bowl". Step 9 Put a lil grated cheese in the centre and then a spoon of mushroom filling. Bring all the sides together and seal the buns. Prepare all the buns in the same way. Step 10 Grease a muffin tray and place all the buns inside it. Keep it aside for 15mins. Step 11 In a bowl take 2tspn milk and 1 tspn sugar and mix it well till sugar is dissolved. After 15mins, once the buns have risen, brush milk and sugar mixture nicely over the buns. Step 12 Bake these buns in a preheated oven at 200°C for 15 - 20 minutes or till it gets a golden brown colour on the top. Step 13 Garnish with coriander leaves and onion seeds. Serve hot. Heat 2 tablespoons of Mother Dairy butter in a pan, add 1 tablespoon garlic and stir for a minute. 2. Then, add 150 grams onions, 2 teaspoons green chilli, and fry till translucent or until it turns golden brown 3. Now, add 200 grams mushrooms, 200 grams spinach, and mix it well. 4. Cook for 5 - 7 minutes on medium heat. 5. Add 30 grams of Mother Dairy fresh cream and mix it well. 6. Then, add 8 Mother Dairy cheese slices and mix it well. 7. Cheesy Mushroom Bread | Cheesy Buns | Cheese Bread Recipe | Masala Bun Ingredient: • Flour – 500gm • Milk – ½ cup • Sugar – 30gm • Yeast – 1 tsp • Egg • Butter – 30ml • Salt – 1/2tsp • Baking powder – 1/2tsp • Baking Soda – pinch Filling • Oil • Grated Garlic Clove • Onion – ½ • Beech Mushroom • Lime Juice -1tsp • Salt – 2pinch • Black Pepper – pinch • Green Coriander • Tomato Sauce • Egg – Boiled and cut into circle shape • Cheese
Mushroom Buns 70 gms Sweetened Condensed milk➡️ 1 Tbsp dry yeast ➡️Pinch of Salt ➡️1/2 Tsp butter➡️ 1 cup lukewarm milk➡️ 250 gms All purpose flour ( Maida ) ➡️2 tsp cocoa powder➡️ 1 tsp Rice flour powder ➡️1 tsp vanilla powder or essence➡️ 1 tbsp water -In a bowl add 70 gms condensed milk , dry yeast , salt , Lukewarm milk . - Mix it well - Add flour and knead a dough - Cover and keep it aside for 1/2 hour - Open and knead again - Cut it into equal parts - Give it a round shape - Cover and keep it aside - Roll in and fill chocolate chips in it - Seal it nicely - In this way make all the buns - Add cocoa powder , rice flour , vanilla powder and water mix it well - Now great the bun with the prepared paste - Transfer it in a baking tray - Keep aside for 4-5 hours and let it double in size - Preheat oven at 180 degree celcius - Now bake buns for 15 mins at 180 degree celcius - Once baked great it with melted unsalted butter.
Mushroom & Aubergine Bao buns These bao buns are amazingly soft, fluffy and perfect to accompany an array of fillings. I chose to make a mushroom and aubergine filling but theres so many options you can go for. Once steamed, you can also add to the freezer for later! Ingredients: Bao Buns • 300g plain flour • 1 tsp yeast • 1 tbsp sugar • 1 tsp baking powder • 80ml water • 80ml milk • ½ tsp salt • 10ml oil • Coriander • Spring onion • Mayo • Sriracha sauce • Hoisin sauce - optional Panko Aubergine: • 1 medium aubergine • 1 cup Panko breadcrumbs • 1 cup flour • 1 cup water • 1 tsp salt, • 1 tsp garlic powder • 1 tsp onion powder • 1 tbs Italian herbs Mushroom: • 2 king oyster mushrooms • 3 large shitake mushrooms • 2 tbs soy sauce • 1 tbs ginger and garlic paste • 1.5 tbs corn flour Method: 1. In one bowl add milk, water, oil, yeast and sugar and mix – set aside for 10 mins 2. In another bowl, add salt, baking powder and flour 3. Make a well, then pour in the yeast. Mix the two together with a spoon, then knead till smooth – about 5 – 10 mins 4. Cover bowl with cling and leave to rest for min 1 hour in a warm place 5. Cut some greaseproof paper into squares and lay onto a flat surface 6. Turn the dough out onto a surface and fold over into a ball, then, roll out the dough, turning over frequently to about 1 cm thick. if it gets sticky, add some neutral oil over the surface 7. Use a cup or bowl to cut out round bao shapes – around 8cm wide 8. Remove the excess dough and set aside 9. Dab your finger in oil and rub it over the bao so that they wont stick when you open them. Then fold in half 10. Carefully lift it up and add it to the individual greaseproof paper 11. Use a rolling pin to very gently roll across the dough, to help it cook evenly 12. Repeat these steps on all of the dough you have cut out 13. With the excess dough, fold it back over into a ball and roll out to 1 cm thick and just keep repeating the steps 14. Once all the dough has been rolled, cover the bao’s with a kitchen towel, and leave for 30 minutes in a warm piece – it will become really fluffy! 15. Add some greaseproof to a steamer then add each bun leaving space in between -don’t let the dough touch the sides either 16. Steam for 12 minutes, then turn off your steamer (if electric release the pressure) and let it chill for 3 minutes before taking off the lid and removing 17. Its ready to use or you can re steam again for 2 – 3 minutes once your fillings are ready Aubergine • Wash then cut the aubergine into around 1cm thick slices • Lay on a tray and sprinkle each piece with salt – leave for 30 minutes, then remove excess water with paper towels (The aubergines will be extra crispy if you do this but you can skip it if you don’t have the time – I did!) • Prepare one bowl with breadcrumbs, in another bowl, add the flour and water and mix • Then add the salt, garlic powder, onion powder and Italian herbs and whisk well • Grab an aubergine slice and chuck it into the flour batter • Coat it well then add it to the breadcrumbs and cover completely • Add to a wire rack and repeat on all the aubergine and leave for 5 – 10 minutes • Heat oil in a pan, enough to shallow fry, then add in the aubergine but don’t overcrowd • Fry for a few minutes on each side , then remove and drain excess oil • Add straight to bao bun or keep warm in a hot oven Mushrooms – • Shred the king oyster mushroom into thin pieces and chop the shitake • Add to a bowl with the soy sauce, ginger & garlic paste and mix well • Then add the corn flour and mix again – it may start to dry and get thick • Cover the bowl and set aside until you need it - its best to marinate for at least 1 hour • When ready, heat a pan with some oil – enough to coat the pan plus more • On a medium high heat, add the mushrooms one piece at a time ( cooking in batches), allowing space in between to allow the mushrooms to crisp • Don’t touch them while for 2 – 3 minutes until you can see the bottoms brown • Then turn them over one by one – keep them separated so it can crisp up a little • Cook the other side, then remove from the pan and drain • Add to Bao buns straight away Bao: • Spread the bao bun with some mayo, then add the aubergine, spring onion, mushroom and coriander, then squeeze over sriracha sauce and a tiny bit of hoisin if using • Enjoy! Instructions Mix chicken meat with salt, pepper, Italian herbs and sweet mustard. Make two patties and transfer them into the fridge for 30 minutes.Meanwhile whisk olive oil, dried oregano, salt and pepper. Cover mushroom caps with seasoned oil and put on the grill for 7-10 minutes, flipping halfway through.When “buns” are done, place patties on the grill and cook for 15 minutes, turning them on the other side halfway through. Alright it is time to dive into the world of keto recipes! This is a Keto Burger with Portobello Mushroom as the bun. These mushrooms make for the perfect burger bun size. I had the burger portion pre-made using some 85/15 ground beef that I cooked on the flat top that I had shown several videos ago on my channel. I topped those with some reduced fat cheese. I had to heat those back up for this recipe but I’m glad I did. I sprayed down the mushrooms with non stick spray and tossed them in the air fryer at 400 degrees for 5 minutes. This was a straight guess on temp and time but they turned out amazing! I wouldn’t change a thing (well maybe a little Everything but the bagel to top the mushrooms). Outside of that I went with basic sauces for the burger (mustard/ketchup/light Mayo). The mushrooms had the perfect level of moisture and made for the right bite through texture. I have found myself a win for future bunless burgers (especially since I love mushrooms). It would be tough to eat these if you didn’t like mushrooms. I’m sure there’s a way to minimize the mushroom flavor but for fans of mushrooms or even for just liking them this is a major win! Side note, I thought it was spelled portabella (who else thought the same?)
