Come with me as I enjoy one last meal in Guyana and have some of the best duck curry in the country! My guide Stacey and I would be headed to Bistro Café & Bar, which is a nice, modern restaurant known for their award-winning duck curry. Inside, they led us into the kitchen, where they immediately showed us the duck curry. 📝SUBSCRIBE TO MY NEWSLETTER: 🤍 🌳 MY LINKTREE: 🤍 They also had snapper, chicken wings, and other dishes. They have a fusion menu, onion rings, bar food, and more. They even have wine! We started with some jerk chicken wings and their Montes Alpha 2018 Cabernet Sauvignon. The gravy on the duck curry looked outstanding. I couldn’t wait to dig into it! The wine was really good and rich. It would pair really nicely with the rich duck curry. The jerk chicken wings were very flavorful and had a bit of spice to them. They use their own jerk spice seasoning. I could taste the cumin in it. Next, we jumped on the duck curry, which we ate with flaky dal puri. The meat was so tender and juicy, and it was full of flavor because it was so close to the bone. The dal puri was also really nice. The peas in it were really good. But I couldn’t get enough of the duck curry and its gravy! I was in love with this dish! Then, I tried some of the dal with some rice and the duck curry. It was a really nice mix! And the win paired nicely with it! I couldn’t help but finish every grain of rice. Then, I made sure to lick the plate because the gravy was too good to leave! This duck curry was easily one of my favorite dishes of the entire trip. I made sure to soak up all of the gravy with the dal puri. Then, I cleansed my palate with some coconut water. From there, we headed to Bistro Wine & Champagne Bar at Movie Town Complex. They have an amazing ambience and have champagne bottles on the wall as you walk in! In the kitchen, I watched them prepare us some sushi rolls and some red sangria, tuna rolls, and unagi. We also had steamed dumplings, shrimp tempura, and more. It’s international food, so it’s not traditional Guyanese! My first roll contained shrimp and avocado and was coated in panko bread crumbs. I loved it! Next was the jalapeno roll, which was really nice, and the unagi, which was our favorite! The dumplings came with a sweet and sour sauce. We went with the chicken dumpling first, which contained chives and had pulled chicken inside. It was nice and light. The pork dumpling was juicier and heavier, and had some thyme flavor and was much heavier, but more flavorful. I loved it! Where have you been? KUTTANADAN DUCK CURRY || KUTTANADAN THARAVU CURRY INGREDIENTS: 1: Duck 500gms ( with skin) 2: Onion 3 sliced 3: garlic cloves 12 4: ginger small piece chopped 5: coconut oil 4 tsp 6: cloves 3 nos 7: cardamom 3 nos 8: star anise small piece 9: cinnamon stick small piece 10: green chilli 3 nos chopped 11: coriander powder 2 tsp 12: turmeric powder 1 tsp 13: pepper powder 1 tsp 14: garam masala 1/2 tsp 15: salt 16: thick coconut milk 3/4 cup 17: thin coconut milk 2 cup 18: water 1 cup 19: curry leaves 20: fennel seeds 1 tsp 21: bay leaves 1 nos METHOD 1: Heat oil in a kadai,add spices and fennel seeds after that add garlic and ginger ,saute well. 2: Now add green chilli ,onions and salt ,saute well until oninon turns to golden brown in colour. 3: Add coriander powder,turmeric powder and pepper powder.saute well until raw smell goes 4: Add one cup of water ,mix well then add duck and some thin cook milk.cover and cook. 5: once the duck completly cooked ,add garam masala powder and curry leaves and boil it. 6: add thick milk ,heat for 1 minutes .switch off the flame. Now our special KUTTANADAN DUCK CURRY is ready to serve...... കുട്ടനാടൻ താറാവ് കറി ചേരുവകൾ 1. താറാവിറച്ചി സ്‌ക്കിന്നോടു കൂടിയത് അര കിലോ 2. സവാള 3 എണ്ണം ചെറുതായി അരിഞ്ഞത് 3. വെളുത്തുള്ളി 12 അല്ലി 4. ഇഞ്ചി ചെറിയ കഷ്ണം അരിഞ്ഞത് 5. വെളിച്ചെണ്ണ 4 ടീസ്പൂൺ 6. ഗ്രാമ്പൂ 3 എണ്ണം 7. ഏലക്ക 3 എണ്ണം 8. പട്ട ചെറിയ കഷ്ണം ഒന്ന് 9. കറുവയില ഒന്ന് 10. തക്കോലം അര കഷ്ണം 11. പച്ചമുളക് 3 എണ്ണം അരിഞ്ഞത് 12. മല്ലിപൊടി 2 ടീസ്പൂൺ 13. മഞ്ഞൾപൊടി ഒരു ടീസ്പൂൺ 14. കുരുമുളകുപൊടി ഒരു ടീസ്പൂൺ 15. ഗരമസാലപ്പൊടി അര ടീസ്പൂൺ 16. ഉപ്പ് ആവശ്യത്തിന് 17. തേങ്ങയുടെ ഒന്നാം പാൽ മുക്കാൽ കപ്പ് 18. തേങ്ങയുടെ രണ്ടാം പാൽ രണ്ട് കപ്പ് 19. വെള്ളം ഒരു കപ്പ് 20. കറിവേപ്പില 2 തണ്ട് 21. പെരുംജീരകം ഒരു ടീസ്പൂൺ തയ്യാറാക്കുന്ന വിധം 1. ചട്ടി ചൂടായി കഴിയുമ്പോൾ വെളിച്ചെണ്ണ ചേർത്ത് കൊടുക്കുക 2. വെളിച്ചെണ്ണ ചൂടാകുമ്പോൾ അതിലേക്കു കറുവയില, തക്കോലം, പട്ട, ഗ്രാമ്പൂ, ഏലക്ക, പെരുംജീരകം എന്നിവ ചേർത്ത് രണ്ട് മിനിറ്റ് വഴറ്റിക്കൊടുക്കുക. 3. ശേഷം ഇഞ്ചി, വെളുത്തുള്ളി ചേർത്ത് പച്ചമണം മാറുന്നത് വരെ വഴറ്റുക. 4. ഇനി ഇതിലേക്ക് പച്ചമുളക്, സവാള, ആവശ്യത്തിന് ഉപ്പ് ഇവ ചേർത്ത് നന്നായി വഴറ്റി എടുക്കുക. 5. ശേഷം ചെറിയ തീയിൽ വെച്ച് മസാലപ്പൊടികൾ ചേർക്കുക ( മല്ലിപൊടി,മഞ്ഞൾപൊടി,കുരുമുളകുപൊടി). ഇവ ചേർത്ത് പച്ചമണം മാറുന്നതുവരെ വഴറ്റി കൊടുക്കുക. 6. ഒരു കപ്പ് വെള്ളം ചേർത്ത് നന്നായിട്ട് യോജിപ്പിക്കുക. ഇനി മീഡിയം ഫ്ളൈമിൽ തിളപ്പിച്ചെടുക്കുക 7. താറാവിറച്ചി ചേർത്ത് നന്നായിട്ട് ഇളക്കി യോജിപ്പിച്ച ശേഷം രണ്ടാം പാൽ ചേർത്ത് കൊടുത്തു നന്നായി ഇളക്കി യോജിപ്പിച്ചു അടച്ചു വെച്ച് വേവിക്കുക( താറാവിറച്ചിക്ക് വേവ് കൂടുതലുള്ളതിനാൽ 50 മിനിട്ടോളം എടുക്കും വേവാൻ). 8. ഇപ്പോൾ വെന്തു വെള്ളം വറ്റി കുറുകി വന്നിട്ടുണ്ട്. അതിലേക്കു ഗരമസാലപ്പൊടി, കറിവേപ്പില ഇവ ചേർത്ത് ഇളക്കി യോജിപ്പിച്ചു ഒന്ന് തിളപ്പിച്ചെടുക്കുക. 9. ശേഷം ഇതിലേക്ക് ഒന്നാം പാൽ ചേർത്തുകൊടുത്തു ഒന്നങ്ങു ചൂടാക്കി എടുക്കാം( ഒന്നാം പാൽ ചേർത്ത ശേഷം തിളപ്പിക്കരുത്). ഇനി ഫ്ളൈയിം ഓഫ് ചെയ്യാം. ഇപ്പോൾ നമ്മുടെ രുചികരമായ കുട്ടനാടൻ താറാവ് കറി തയ്യാറായിട്ടുണ്ട്. വീഡിയോ ഇഷ്ടപ്പെട്ടെങ്കിൽ ഷെയർ ചെയ്യാനും സബ്സ്ക്രൈബ് ചെയ്യാനും മറക്കരുതേ.

If you are in Baltimore eat Crab, if you are in Alleppey eat Duck! Must try festival dish of Kerala. Whole duck - 2 nos Curry cuts, with or without skin cleaned wash and strained. Grated coconut-2 ( make 1st, 2nd and 3rd extract of coconut milk) Onions sliced- 4 Shallots cut into halves - 300gm Green chillies- 6 Garlic crushed-50gm Ginger crushed-50gm Coconut oil- 50ml Fennel seeds-10 gm Turmeric powder-10gm Coriander powder-50gm Salt to taste Curry leaves- few Green cardamom crushed- 6nos Black pepper corn crushed- 40gm ( according to your spice level) Garam masala - 8 gm In a heavy pot heat coconut oil add fennel seeds, garlic, ginger and green chillies sauté for 3 minutes add onions and shallots sauté for 10 minutes add turmeric, coriander powder, salt and sauté for two minutes add cleaned duck meat and sauté 5 minutes add 3rd and 2nd coconut coconut milk and slow cook for one hour or till the duck softened. Add crushed green cardamom, black pepper, garam masala and curry leaves. Add the 1st coconut milk and switch of the fire and cover the curry and rest for 30 minutes. Check the seasoning and serve with Hoppers, string hoppers or Kerala porotta!

This is country style duck curry mostly made in Nepali village. There are so many ways to prepare Nepali style duck curry but this one is made with a whole garlic bulb. This is usually serve with rice and something called "bagia". Bagia is a type of steam food that is made of spicy lentil stuffed in rice flour dough and steam to the perfection.

This is one my absolute favorite dishes & it can be adjusted however you prefer. We always cooked this meal dry braised with peas. The peas is optional & can be omitted, potatoes can also be added if preferred but our family personally enjoyed this meal as demonstrated below. Duck usually takes anywhere from 30 minutes up to 3 hours to cook, depending on how tough the meat is, as well as where it has been purchased from. Tharavu Curry Recipe | Spicy Duck Curry Recipe – Kerala Style Ingredients Duck /Tharavu : 1 kg Turmeric Powder : 1/4 tsp Red Chilly Powder : 2 tbsp or to your spice level Coriander Powder : 2 btspShallots /Small Red Onions : 1/4 cup (finely,sliced) Dried Whole Red Chillies : 2-3 Broken into two pieces Mustard Seeds : 1 tsp Curry Leaves : few Green Chillies : 6 oor 7 or to your spice level (slit, lengthwise) pepper powder-1tbsp Onion : 2 large (finely, sliced) Small onion :6 or 7 Ginger : 1 tbsp (chopped) Garlic : 1 tbsp (chopped) Semi Thick Coconut milk – 2 cups Garam masala powder : 3 tsp home made garam masala cinnamon : 1 inch stick cloves : 5 cardamoms : 4 pods, star anise :2 fennel seeds : 1/2 tsp Method First we Cut the duck into medium sized pieces wash well and squeeze out the excess water and drain it. Then we prepare ginger garlic paste and keep a side Heat oil in a heavy-bottomed pan / cheena chatti at medium heat. Splutter mustard seeds and ginger garlic paste, fry dried red chilies ,small onion,curry leaves,coconut pieces( thenga kothu) and big onion until golden colour. Add chilli powder,coriander powder,turmeric powder,pepper powder, and saute for couple of minutes. Then add duck pieces and mix well all ingredients Add 1 cup coconut milk. Mix well. The curry would be light brown. Continue cooking for another 5 to 6 minutes, until the curry changes to a brown colour Add the thick coconut milk (1st extract) and stir gently. Cover and cook for another 2 to 3 minutes Then we finally add the garam masala and mix well and cook some minutes. Add salt to taste Cover and cook for some minutes and remove from the heat.
