This recipe of Christmas Fruit Cake is one of the simplest and by far the best I have tried ! This super moist and delicious cake is dense and pack with soaked flavorful fruits . I promise you can’t go wrong with this simple step by step recipe Stewed Fruits Recipe 🤍 Stewed Fruits Recipe 🤍 Ingredients 1 lb prunes, seeded and chopped 1 lb raisins 1 lb currants 1/2 Ib cherries chopped 1 bottle of rum 1 bottle of cherry brandy 2 cups or 1 lb butter 2 cups or 1 lb sugar 9 large eggs 2 tsp.grated lime peel 2 tsp. vanilla extract 1 1b or 4 cups flour (baking or all purpose) 4 tsp Baking powder 1 tsp salt 1 tsp mix spice 2 tsp. ground cinnamon 2 tsp nutmeg 1/4 cup browning or more (4-5 cups of soaked fruits) The day before or some days before baking, boil the fruits( prunes, raisins, currants, cherries (Link is provided) Line cake pans with 1 layer of wax paper. Cream butter and sugar until light and fluffy. Beat eggs one at a time. Pour eggs into the batter and add lime peel. Add fruits to blender and lightly blend, then add to batter. Add enough browning to give desired colour. Combine flour, baking powder, cinnamon, salt, nutmeg, lfold into creamed mixture gradually. Add more rum to ur desired taste. Put in lined baking pans and bake in a preheated oven at 250°F for first 45 minutes, reduce heat to 200°F- 225°F for the remaining 45 minutes, or until tester comes out clean. Prick hot cakes and soak with a mixture of rum and cherry brandy. (Any Alcohol You Desire) Cover and set aside to cool. Soak overtime for a few days to keep moist.

Hey guys I just wanted to share this Tutorial on how to make my Fruit Cake/ Black cake with You guys. As always the steps are very easy to follow and you really don’t need any kitchen experience to be able to pull this off. Thanks for the love and support on my previous videos and I will see you again soon in my next one :) Ingredients List ————————————————— 450g butter 380- 400g brown sugar 450g self rising flour 1 tsp baking powder 3 cups blended fruits 9 eggs (remove the white sacks from egg as it tends to make the cake taste raw) 1 lemon zest 1 1/2 tbs browning (can add more to liking but be careful the cake don’t turn bitter) The juice of 1 medium orange 2 tsp mixed spice (cinnamon and nutmeg) 1 tbs mixed essence (can use essence of choice) 1/2 cup white or dark rum This recipe makes a 1lb cake. Total bake time 1hr 45 - 2hrs on 180•C. Allow to cool for 20 minutes after baking then sprinkles or brush some red label wine on the top and allow to sit for 24hrs (or a few hours if impatient) before cutting. Enjoy! Have you ever needed to make black icing but don't have time to let the colour develop overnight? In this video, I will show you a quick hack to make black icing in less than 15 minutes. Yes, that's right. No more waiting overnight or for hours for it to develop which is really useful if you're creating a design and realize that you need PERFECT BLACK ICING. This method works for both royal icing and buttercream. I have also tried this with fondant and it works equally as well in less than 15 minutes. The cake is made with rum soaked dried fruits, browning and spices plus the typical cake ingredients. It is a necessary part of any Trini Christmas lime. But everyone has their own version, their own special secret ingredient, and their own choice of alcohol and rum. Ingredients: SOAKING FRUITS 400 g raisins 400 g cherries 400 g pitted prunes 400 g mixed peel 750 mL blackberry wine* 100 mL dark rum* * Cherry brandy, dark rum, white rum, and wine can be used. In Trinidad and Tobago, Black (Fruit) Cake is THE dessert of the Christmas season: Yield: 1 (9 Inch) Cake INGREDIENTS ¼ Cup Prunes, deseeded ¼ Cup Cherries ¼ Cup Raisins or Currants ¼ Cup Mixed Peel ¾ Cup Dark Rum ½ Cup Cherry Brandy 8 Oz Butter (Room Temperature) 1 1/3 Cups Brown Sugar 4 Large Eggs 1 Tsp Almond Essence 1 Tsp Vanilla Essence 2 Cups Flour 2 ¼ Tsp Baking Powder 2 Tsp Cinnamon Powder ¾ Tsp Nutmeg Powder ½ Tsp Elychee Powder (Cardamom) Zest of an Orange 1/3 Cup Browning ¼ Cup Chopped Almonds To Soak Cake: ½ Cup Dark Rum ¼ Cup Cherry Brandy METHOD 1. In a deep medium bowl, add in the prunes, cherries, raisins, mixed peel and pour in the dark rum and cherry brandy. Mix well and allow fruit to soak in alcohol for a minimum of three days straight up to many months. (If soaking for numerous months, be sure to top up with more alcohol as fruits will absorb it as time goes by). Cover bowl and place to soak for your selected period of time. 2. Place fruits and its liquor into a food processor and process until semi coarse in texture, somewhat similar to a liquid paste consistency. Set aside. 3. Place either the beater or paddle attachment onto your stand mixer and in the mixing bowl; add in the softened butter, and sugar. On high speed, cream ingredients until light, fluffy and batter has increased in volume. (About five minutes) 4. On medium speed, add in the eggs one at a time just until they are all incorporated evenly into batter. 5. Switch machine off and using a rubber spatula, clean the sides of the bowl to allow all ingredients to thoroughly combine. 6. Into a separate bowl, sift the dry ingredients such as the flour, baking powder, cinnamon, nutmeg and elychee in. Set aside. 7. Place mixer back on to low speed and add in almond and vanilla essences as well as the addition of the sifted flour in two or three portions simultaneously as the machine runs. 8. Turn machine off and add in the orange zest, processed fruits and the browning. Place machine back onto low speed and allow ingredients to mix well ensuring to scrape down the sides of the bowl. Do not mix batter too much, just until fruits are evenly combined then turn off mixer. 9. Preheat oven to 280 degrees Fahrenheit. 10. Prepare a 9-inch spring form pan by greasing with some softened butter then dusting lightly with flour. Cut a circular piece of grease proof paper that fits the circumference of pan’s base and carefully lay inside. Pour fruit cake batter into the pan, then tap gently against the counter to settle the batter evenly. 11. Place cake pan into the oven on the middle rack and bake for about 1 hour and 10 minutes or until a toothpick or skewer, inserted in the cake, comes out clean. If still gooey, return cake back into oven for an additional 10 to 15 minutes and monitor so it doesn’t burn. 12. Meanwhile, in a small bowl; mix the ingredients to soak the cake. 13. When cake is done, let sit for 10 minutes to cool. Using a skewer, pierce the surface area of cake to create minute holes. Drizzle or brush the alcohol mixture all over the cake to allow the alcohol to soak in. 14. Allow cake to rest until completely cool, then slice and enjoy. 15. You can also continue to soak the cake a few more times over the course of the next few days to allow it absorb more alcohol and truly become stronger in flavor before slicing. This I recommend fully. This traditional recipe for black cake hails from Trinidad and Tobago, but I'm sure it done very similar in Jamaica, Barbados, Grenada, St Vincent, St Lucia, Antigua, Dominica and all the other beautiful islands which make up the Caribbean. Another family friend’s cake coming your way! The instructions were to make a black and pink cake- this is probably one of the easiest designs you will create, fit for a 60th birthday or even a wedding haha! Not kidding. I would legit be happy with this as a small wedding cake. Something about this design is just so simplistic, but all the while demand all the attention in the room. I think anyway ;) In the video, I share how I like to make black frosting / buttercream. You don’t have to mix buttercream with ganache, you could simply colour white buttercream with the black gel food colour, or you could add the gel colour to straight up dark chocolate ganache, with no buttercream at all. By doing the latter, you would probably only need to add one third of the amount of gel food colour :) I reserved this coloured frosting for the outside of the cake and used all natural buttercream for the filling. People tend not to eat the outside decoration, so you are less likely to have your guests wind up with purple tongues by the end of the night, compared to if you coloured the frosting all the way through the cake. 6 tablespoons of browning (less or more if you needed) I like mine dark! Grease and flour baking sheet and line with parchment/wax paper. You can also line parchment paper around the edges of the pan to prevent burning of the cake since it takes a while to bake. Insert toothpick to test cake, if it comes out clean the cake is finish Preheat oven and bake at 275 degrees for 2 hour and 15 minutes then remove pan with water and bake for extra 30 minutes at 300/ 350 degrees Video of fruits being soaked 🤍
