The softest cinnamon rolls I ever made! Before they used to turn out so dry and crummy, but now I don't use any other recipe than this one! Printable RECIPE: 🤍 DOUGH (CLICK ABOVE LINK FOR METRIC MEASUREMENTS) 2½ cups all purpose flour ¼ cup sugar 2¼ teaspoons instant yeast ½ teaspoon salt ½ cup whole milk 3 tablespoons butter 2 tablespoons vegetable oil 1 teaspoon vanilla 1 egg ¼ cup water FILLING ¼ cup butter soft ⅓ cup brown sugar 1 tablespoon cinnamon pinch salt CREAM CHEESE GLAZE 4 ounces cream cheese room temperature 2 tablespoons butter room temperature ¾ - 1 cup confectioner's sugar ½ teaspoon vanilla INSTRUCTIONS For the dough, combine in a large bowl the flour, sugar, instant yeast and salt. Heat milk in a small pot over the stove or in the microwave until quite warm. Add butter and stir until melted. Add vegetable oil and vanilla. Cool milk mixture to lukewarm if necessary. You should barely be able to feel it when you stick your finger in it. Make a well in the dry ingredients and add milk mixture. Add egg and water. Mix by hand or using stand mixer until the mixture forms a very soft, sticky dough. Knead 6-8 minutes using the dough hook attachment or by hand. Add 2-3 tablespoons of flour if the dough looks too much like a thick batter, but it should still be very sticky. If the dough is very dry and easy to handle, add more water to make it sticky. Knead until it feels very smooth. Cover well with plastic wrap and proof for 1½ - 2 hours or until doubled in bulk. While dough is rising, combine the brown sugar and cinnamon in a small bowl for the filling. Once the dough has proofed, roll out into a rectangle that measures 15x10 inches. Use a small amount of flour on your work surface to prevent sticking. Spread the soft butter over entire surface of the dough, then sprinkle on the brown sugar and cinnamon mixture. Starting from long edge closest to you, roll dough as tightly as you can. When you reach the end, pinch the seam very well to seal. Using a sharp knife or a piece of string, cut the roll into 8-12 buns. Arrange evenly in a buttered parchment lined 14 x 8 inch pan and cover with plastic. Allow to rise in a warm place for another 45-60 minutes or until doubled in size. Preheat oven to 375F/190C. Bake rolls for 18-22 minutes or until golden brown and fully cooked in the middles. Set aside to cool while making the frosting. For frosting, cream together cream cheese and butter until smooth. You can do this by hand or with an electric mixer. Slowly add the powdered sugar, a couple of tablespoons at a time, creaming well after each addition. Add vanilla and beat until smooth. Frost cinnamon rolls while they are still slightly warm but not too hot. The frosting should not melt. Serve immediately or keep well wrapped in the refrigerator for up to 5 days. Subscribe for more video recipes: 🤍 Ingredients Dough 1 ¼ (310 ml) cup 2% milk, just above body temperature (105 F) 2 ¼ tsp (1 pkg or 8 g) instant dry yeast ¼ cup (50 g) sugar 1 large egg at room temperature ¼ cup (60 g) unsalted butter, melted 3 ½ cup (525 g) all-purpose flour ¾ tsp (4 g) salt Goo ½ cup (115 g) unsalted butter 1 cup (200 g) packed light brown sugar ½ cup (125 ml) maple syrup Filling & Assembly ⅔ cup (140 g) packed light brown sugar 1 Tbsp (10 g) ground cinnamon 3 Tbsp (45 g) unsalted butter, melted Directions Dough 1. For the dough, measure all the ingredients into a bowl and stir with a wooden spoon, or blend in a stand mixer fitted with the hook attachment until evenly combined. If mixing by hand, turn the dough out onto a work surface and knead until smooth, about 5 minutes, or if in a mixer, knead for about 3 minutes. Transfer the dough to an oiled bowl, cover with plastic wrap and let rise until doubled in size, 90 minutes to 2 hours. Goo 1. For the goo, add the butter, brown sugar and maple syrup in a saucepan over medium heat, stirring until melted and the mixture is bubbling. Pour this into a greased 9-x-13-inch pan the prepared pan and set aside. Filling & Assembly 1. For the filling, stir the brown sugar and cinnamon together and set aside. Have the melted butter ready. 2. Turn the risen dough onto a lightly floured surface and roll it out into a rectangle about 18-x-12 inches. Brush the entire surface of the dough with the melted butter and sprinkle with the cinnamon brown sugar mixture. Roll up the dough from the longer side and then cut the roll into 12 pieces. Place these into the prepared pan, evenly spaced, cover with plastic wrap or tea towel and let rise for an hour. 3. Preheat the oven to 350 F (175 C). Uncover the risen sticky buns and bake them for 40-45 minutes, until they are a rich golden brown. It is recommended to cool the sticky buns for 15 minutes in the pan before inverting to serve. 4. The sticky buns are best served the day they are baked. Tip: If you want to enjoy the sticky buns first thing in the morning, prepare the buns to the point of cutting the dough and putting them in the goo in the pan, then cover and place in the fridge overnight. Take the buns straight from the fridge and place in a cold oven. Set the temperature to 350 F (175 C) and bake for 45 minutes. By the time the oven gets to temperature, the buns will have raised the perfect amount. Rise in fridge overnight, you can bake right away, they will be less risen and more filling will melt out. 8. 12-36 hours later, bake rolls at 350F tented with foil for 45 minutes 9. Remove foil and bake 15-20 minutes longer, frost immediately. FOR THE FILLING 115g or 1 stick BUTTER (softened) 150g or a full 1/2C. Brown sugar 20g or 2.5 tbsp CINNNAMON 1g or 1/4 tsp SALT 1. Whip with paddle attachennt in stand mixer, or with egg beater until well creamed and light brown, about 5-7 minutes. FOR THE FROSTING 115g or 3/4C. CREAM CHEESE (softened) 10g or 2 tsp VANILLA EXTRACT 140g or about 1 1/4C. POWDERED SUGAR the zest of 1/2 a lemon. 1. Freunde, heute habe ich beschlossen, die berühmten klassischen amerikanischen Cinnamon Rolls-Cinnabons zu kochen, die auf der Zunge zergehen. Es ist sehr lecker und schön! Rezept und Kochmethode: 250 ml warme Milch. 2,5 Teelöffel (8 g) Trockenhefe. 70 Gramm Zucker. Mischen und 5-10 Minuten einwirken lassen. 1 Teelöffel Salz hinzufügen. 80 g geschmolzene Butter. 2 Eier. 525 g Mehl durch ein Sieb sieben. Gut mischen. Mehl nach und nach zugeben. Den Teig in einer Schüssel kneten. Es ist sehr wichtig, Mehl hinzuzufügen, während der Teig ständig gerührt wird. Den Tisch gut mit Mehl bestäuben. Den Teig auf dem Tisch kneten. Der Teig sollte glatt und sehr weich sein. Schmieren Sie die Schüssel mit Pflanzenöl. Den Teig abdecken und 60 Minuten an einem warmen Ort gehen lassen. 1 EL Rohrzucker untermischen. Fügen Sie 2 Teelöffel Zimt hinzu. Gut mischen. Der Teig ist gut aufgegangen. Legen Sie den Teig auf den Tisch. Sprich mir nach. Den Teig mit einem Nudelholz ausrollen. Der Teig sollte 50/30 cm groß sein. Den Teig mit geschmolzener Butter bepinseln. 60 g weiche Butter. Den Teig mit Zimtzucker bestreuen. Rollen Sie das Teto zu einer Rolle. Sprich mir nach. Get 67% off or more on the Kove Mini Commuter with my code AMINI67: 🤍 | Best discount subject to change after March *RECIPE, MAKES 6 ROLLS* For the dough bread flour, about two cups, 250g (AP flour is fine, but I like 00 bread flour for this) 1/3 cup (80mL) milk 1 packet (7g, 2.25 teaspoons) yeast (you could use half that) 2 tablespoons (30g) butter 1/4 cup (50g) sugar 1 egg half a teaspoon (3-4g) salt small glug of vanilla For the filling 1/3 cup (65g) brown sugar (or white sugar with a glug of molasses, which is the same thing) small pinch of salt melted butter (you'll only need a little for the filling, but it's nice to have extra for other steps, so I'd melt a couple tablespoons) 1 tablespoon (8g) ground cinnamon (that's a lot — you could use less) For the marshmallow glaze 1 egg white (leftover from the dough) 1/3 cup sugar (65g) a squeeze of corn syrup, honey, or any other syrup that isn't primarily sucrose vanilla 1 tablespoon (15g) butter Warm the milk to body temperature, perhaps with a small pinch of sugar to further feed the yeast. Stir in the yeast and let bloom for a few minutes until frothy. Melt the butter and stir in the sugar to cool it back down. Separate the egg, reserve the white for the glaze, and put the yolk in with the sugar and butter. (If making a full dozen rolls you could just use one whole egg.) Add the salt and vanilla to the butter mixture and stir smooth. Stir as much flour as you can easily stir into the milk mixture with a spoon (it was a little less than a cup for me), and do the same with the butter mixture (mine took maybe 2/3 of a cup). Cover and let sit for about a half hour until the milk dough has puffed up a lot. Knead the two doughs together until homogenous, dusting on additional flour as needed until you get a reasonably smooth dough that's just a little sticky. Cover and let rise until doubled, about 2 hours. While you're waiting, you can mix up the filling ingredients. Be careful to add only enough melted butter to get a damp sand consistency — too much butter and the filling will melt out in the oven. Transfer the risen dough to a board, dust with flour and roll out into a rectangle about a foot (30 cm) wide. Roll the bottom long end very thin — this will be the flap you use to seal the roll. Brush the surface with melted butter, avoiding that flat at the bottom. Pat on the filling as evenly as possible, again avoiding the bottom flap. Smear some water on the bottom flap to serve as glue, then roll it up, starting from the thicker long end. Don't roll too tightly. Position the seam on the bottom of the roll, and maybe coat it with melted butter if you have some left. At this point you could cover and refrigerate the roll until later. Trim off and discard the ends of the roll, then slice about 1.5 inches (4 cm) thick. Gently transfer the rolls to a parchment-lined baking sheet, cut-side-up. If you have time, cover them and let them proof one more time, about a half hour (definitely make time for this if you sliced the rolls straight from the refrigerator). Bake at 400ºF/200ºC, convection if you have it, until just starting to go golden brown around the edges, 10-15 minutes. While you're waiting, you can make the frosting. Whisk the egg white, sugar and syrup together in a saucepan over moderate heat. Whisk continuously until the eggs cook and you get a mayonnaise-like consistency. Kill the heat and whisk the butter as it slowly melts in. Whisk in a splash of vanilla and you're done. Wait for the rolls cool and solidify for a few minutes before topping with the glaze — I just like to dunk the whole top of the roll straight into the pot.

Here is what you'll need! HOMEMADE CINNAMON ROLLS Servings: 14 INGREDIENTS Dough ½ cup unsalted butter, melted 2 cups whole milk, warm to the touch (110-115˚F) ½ cup granulated sugar 1 pack active dry yeast 5 cups flour, divided 1 teaspoon baking powder 2 teaspoons salt Filling ¾ cup butter, softened ¾ cup light brown sugar 2 tablespoons ground cinnamon Frosting 4 ounces cream cheese, softened 2 tablespoons butter, melted 2 tablespoons whole milk 1 teaspoon vanilla extract 1 cup powdered sugar PREPARATION 1. Generously butter two disposable foil pie/cake pans. 2. In a large bowl, whisk together warm milk, melted butter, and granulated sugar. The mixture should be just warm, registering between 100-110˚F. If it is hotter, allow to cool slightly. 3. Sprinkle the yeast evenly over the warm mixture and let set for 1 minute. 5. Add 4 cups of all-purpose flour to the milk mixture and mix with a wooden spoon until just combined. 6. Cover the bowl with a towel or plastic wrap and set in a warm place to rise for 1 hour. 7. Preheat oven to 350˚F/180˚C 8. After 1 hour, the dough should have nearly doubled in size. Remove the towel and add an additional ¾ cup of flour, the baking powder, and salt. Stir well, then turn out onto a well-floured surface. 9. Knead the dough lightly, adding additional flour as necessary, until the dough just loses its stickiness and does not stick to the surface. 10. Roll the dough out into a large rectangle, about ½-inch thick. Fix corners to make sure they are sharp and even. 11. Spread the softened butter evenly over the dough. 12. Sprinkle evenly with brown sugar and a generous sprinkling of cinnamon. Press the mixture into the butter. 13. Roll up the dough, forming a log, and pinch the seam closed. Place seam-side down. Trim off any unevenness on either end. 14. Cut the log in half, then divide each half into 7 evenly sized pieces (about 1½ inches thick each). 15. Place 7 cinnamon rolls in each cake pan, one in the center, six around the sides. Cover with plastic wrap and place in a warm place to rise for 30 minutes. 16. Remove plastic wrap. Bake the cinnamon rolls in a preheated oven for 25-30 minutes, until golden brown. 17. While the cinnamon rolls are baking, prepare the frosting. In a medium-size mixing bowl, whisk together cream cheese, butter, vanilla, whole milk, and powdered sugar, until smooth. 18. Remove the cinnamon buns from the oven. This is your chance to bake the most delicious cinnamon buns – just follow the recipe by cookbook writer and blogger Fredrik from 'Fredriks Fika'! 👨‍🍳 Here's the full recipe (20 cinnamon buns): Ingredients: 500g milk 50g fresh yeast or 14 g dry yeast 150g butter, softened 90g caster sugar 1 teaspoon salt 1 tablespoon cardamom seeds or ground cardamom 780g wheat flour Filling 150g butter, softened 90g caster sugar 2 tablespoons ground cinnamon Topping 1 egg Pearl sugar or raw sugar Instructions: 1. Heat the milk to 37 degrees Celsius or 98 degrees Fahrenheit. 2. In a large bowl, crumble / add the yeast and add the warm milk. Stir until dissolved. 3. Add butter, sugar, salt, cardamom and flour, and work the dough for about 10 minutes in a stand mixer. The dough should be just so firm so that you can touch it without it sticking to your fingers. 4. Cover the bowl and let the dough rise for about 30 minutes, or until double in size. 5. Combine butter, sugar and cinnamon for the filling. 6. Put the dough onto a floured surface and knead the dough lightly, adding additional flour as necessary, until the dough just loses its stickiness and does not stick to the surface. Roll the dough into a large rectangle, about ½-inch (1cm) thick. 7. Spread the filling evenly on the dough. Fold the dough one time. 8. With a pizza cutter, cut the dough in 20 slices about 1 inch wide (2cm). Twist the dough and turn them to a knot with the end under the bun. 9. Place the buns on baking sheets lined with baking paper. 10. Cover with a towel and let rise for 30 minutes. Preheat oven to 250 degrees Celsius or 480 Fahrenheit. 11. Whisk the egg up in a small bowl, and egg wash the buns and sprinkle pearl sugar or raw sugar. 12. Bake in the middle of the oven for 6-8 minutes until golden brown both on the top and bottom. 13.
